The Testamatta grapes are selected from the five best vineyards of the
Vincigliata, Londa, Lamole, Montefili and Siena. Each vineyard,
divided into plots, is harvested up to 8 times, making sure that all the grapes are picked at the perfect point of ripeness. The 5 old vines, (up to 80 years old) are located in different areas of Tuscany: Lamole & Montefili in the heart of Chianti Classico at 600 and 400 meters altitude; Vincigliata near Florence at 280 meters altitude, Londa north of Florence, towards the Rufina valley and Siena in southern Tuscany at 250 meters altitude. The grapes are hand-picked, then destemmed and gently pressed. Fermentations are conducted by natural and indigenous yeasts, in open barrels (225L) for the smaller vineyard parcels and in stainless steel barrels for the larger ones without any temperature control. After 7-10 days of maceration, the different lots are moved to old barrels and casks for 20 months.
