Adega de Favaios
Favaios 1989 is the kind of wine that is only made in years when the grapes have shown exceptional quality. After a careful selection of the best grapes from Favaios they were macerated and fermented as they were traditionally done in the region. The alcoholic fermentation is very short, and soon after the rising of the must we proceed to the bleeding of most of the must and application of brandy. A small part of the must continues to ferment and macerate with the skins for a few more days and only later is this very aromatically rich must fortified. The first and second fortified must are then blended and stored in very old wooden casks and slowly aged, improving its bouquet over decades.
