Appearance: The yellow gold hue is adorned with delicate, soft golden glints. It has a subtle effervescence, benefitting from 9 years aged in our chalk cellars. Aroma: A delicious fruit intensity with elegant lemony citrus notes and nuts (flaked almonds, Menton lemons). There is a long and nuanced sensory development centred around exquisite hints of patisseries (raw butter, Mirabelle plum jelly). Palate: A taut and seductive tactile pleasure (citrus zest, seeded white flesh fruit and Breton biscuits). The wine offers a persistent finish with a structure defined by the quality of its potential as a great vintage.

This wine with an Extra Brut dosage is dominated by the great Pinot Noir flavours which is tempered by the elegance of the Chardonnay from the Côte des Blancs. 65% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ and Aÿ)

It all started here in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. This has been a family story since the beginning with Louis Salmon, brother of Elisabeth and a passionate oenologist, getting involved in the creation of the wines. Thus, over 7 generations, each member of the family has endeavoured to continue the family tradition, staying faithful to the same motto: “Give priority to quality, strive for excellence”. The Clos Saint-Hilaire is a single parcel where the vines, soil and subsoil are carefully tended with respect for the environment. Several years ago, Billecart-Salmon decided to return to ancestral champagne-making methods in the Clos Saint-Hilaire by using work horses and sheep. This method of maintaining the soil and tending the vines increases porosity and biodiversity: the roots grow deep and the minerals they draw from the soil foster the growth of smaller, more concentrated grapes, revealing the terroir’s typical flavour. The Clos Saint-Hilaire has created an exceptional champagne which is named after the patron saint of Mareuil-sur-Aÿ. Made exclusively from Pinot Noir vinified in oak casks, it develops an outstanding purity. For each vintage, there is a limited release of between 3,500 to 5,500 individually numbered bottles.
