O Produtor, tasting note published in June 2nd 2023

Pacheca Grande Reserva White is a golden yellow wine that evokes tea leaves in the aroma and citrus touches wrapped by toasted wood notes. In the mouth it is mineral, of unusual freshness, given by the high acidity. Great gastronomic potential.

BARREL AGEING:
12 months in 2nd year French oak and acacia barrels with weekly bâtonnage.

WINES:
This wine is obtained from grapes of the Viosinho and Rabigato varieties from several vineyard plots planted at an altitude of 300 metres.

VINIFICATION METHOD:
After careful selection for their best condition, the grapes were harvested into 25kg chests and sent to the winemaking centre where they were lightly pressed in a pneumatic press. The resulting must was sent to stainless steel vats, inertised and cooled, where it remained for 24 hours for decanting. At the end of this period, it was transferred to another stainless steel vat where it was inoculated with selected yeasts, starting its fermentation. After 48 hours of the beginning of the alcoholic fermentation it was transferred to French oak and acacia barrels of 500L where the fermentation ended. Aged with weekly bâtonnage on fine lees for 12 months.

OENOLOGIST:
Maria serpa pimenta
