Careful selection of grapes with spontaneous development of the noble variant of the Botrytis cinérea fungus, providing a distinctive base of acidity and complexity. Light and precise vertical pressing, followed by clarification and fermentation in small stainless steel tanks. Final fermentation and ageing on fine lees in stainless steel tanks and in used Hungarian oak barrels.
