The Dublin Liberties Distillery

The Dublin Liberties Distillery is a state-of-the-art craft whiskey distillery and home to the Irish whiskey brands: the award-winning Dubliner and Dublin Liberties whiskies. The portfolio of award-winning Irish whiskeys has a whiskey to please every palate.

Although the distillery is an example of modern excellence, distillation and whiskey have been closely linked to Liberties for centuries. Dating back to the 11th century, Liberties was an area outside the walls of the city of Dublin and, as such, escaped Dublin’s jurisdiction, laws, and taxes. It was a bustling center of trade and illicit activities.

Dating back to the 1700s, the distillery building is a testament to the industry of this historic neighborhood. Originally conceived as a mill, the distillery was initially, for many years, a tannery specializing in the treatment of rabbit skins.

Currently, it has the capacity to produce over 700,000 liters of whiskey annually. The malted barley comes from Irish farmers, and water used comes from rain that fell over 10,000 years ago, sourced from the well within the distillery. The whiskies mature in special warehouses until they are ready to be released; although Irish whiskey requires a minimum of three years to mature, the premium whiskey from The Dublin Liberties Distillery ages for a longer period.
