Winemaking:
Blend of 70% Loureiro and 30% Alvarinho. Gentle destemming to preserve the full character of the grape varieties. Soft pressing in a pneumatic press, with some pre-fermentation skin maceration of the Loureiro grapes. Fermentation takes place between 16°C and 18°C in stainless steel tanks, in co-fermentation with the Alvarinho grapes.
Ageing:
5 months in stainless steel tanks with bâtonnage.
Food Pairing:
Perfect with grilled fish, Italian cuisine, sushi, and all types of salads.
