O Produtor, tasting note published in July 7th 1905
Deep dark purple colour. Expressive and exuberant on the nose, with an intense bouquet of blackberries, raspberries and black plums, it becomes more complex in the mouth with notes of tobacco and chocolate. Powerful and full-bodied, with round tannins. Great freshness and acidity.
Fermentation with maceration in granite tanks at temperatures between 19 and 22ºC. Foot-passage, pressing and malolactic fermentation. Ageing sur lies. Duration of 67 months. Produced using the classic method.
Casal do Paço, in Vasco Croft’s family since the 17th century, has the soul of an old Quinta and was the starting point for the Aphros project. The farm spreads over almost 20 hectares of land and woodland, six of which are vineyards and four chestnut orchards. In the centre is a 16th-century granite house with two floors and its chapel. The winery, on the first floor, dates back to the house’s origins.
In October 2006, the first biodynamic process was implemented, marking the beginning of something that would transform the estate and its wines.
Now, Casal do Paço is recognised as an ecological winemaking model committed to the preservation of its ecosystems, which includes not only the vineyards, but also entire forests of acacias, oaks, eucalyptus and century-old trees, and is home to wild boar, foxes and eagles.
