Kamoizumi Hajime

The name HAJIME means “the first” in Japanese. This sake is the perfect companion to discover the Junmai sake from Kamoizumi.

The Hajime version is of rare elegance: both smooth and spicy, it evolves into floral and fruity notes with a beautiful aromatic intensity.

The rice used is Hiroshima-Hattan, a local rice ideal for sake production. Its yellow hue reflects its origin, and its roundness on the palate enhances the umami of the rice. A slight acidity makes this sake dry and pleasant to the taste.

The Junmai category refers to sake produced traditionally without the addition of distilled alcohol. It is made from rice, water, and koji (fermented rice or soy with Aspergillus oryzae, a fermentation culture). The rice polishing rate, in this case, is 75%, giving it a smoother texture and a refined flavor profile.

Try this sake with shrimp curry or fresh goat cheese. The ideal serving temperature ranges from cold to warm, around 40 degrees.

Kamoizumi Shuzo

Kamoizumi, founded in 1912, is located in Saijo, the center of sake in Hiroshima Prefecture.

It has long specialized in producing Junmai-type sake (without added alcohol). In 1971, something unprecedented at the time, it managed to use rice polished to 60% of its original weight to produce a Junmai Ginjo that would be recognized throughout the country.

Today, its owner, Mr. Maegaki, is a fervent advocate of the Junmai style and the use of rice and water from the region, whose purity and quality he protects.
