Castello di Ama
The Bellavista vineyard has a surface area of 22.82 hectares, of which 9.30 were replanted between 1974 and 1978 and 13.52 in 2007. The 22 plots of land were terraced to improve exposure and ensure more uniform ripening. In the best vintages, plots 1 to 19 of Malvasia Nera and plots 21 and 22 of Sangiovese contribute most to the production of this selection of vines.
Each grape variety is vinified with environmental yeasts in steel vats at a controlled temperature of 30-33 °C
Manual rackings for 22 days for Sangiovese and 26 days for Malvasia Nera, total cuvaison.
The wines are transferred separately to barrels for malolactic fermentation and then blended.
Aging: 18% new fine grain oak barrels, the rest used, for 10 months
