Before pressing the grapes were crushed and destemmed, no skin maceration was done. The must obtained was cold decanted for 24/48 hours, fermentation and ageing for one year took place in used 228 litre French oak barrels.
Alcoholic fermentation lasted 45 to 120 days and malolactic fermentation was not carried out. Total ageing was 12 months in barrels in the presence of the fermentation lees and 6 months in stainless steel before bottling.
