Torre da Palma
Author’s wine made from two of the most iconic Portuguese grape varieties under a Sustainable Production system: Arinto and Alvarinho.
The hand-harvested grapes were transported to the winery and stored in a cold chamber at 3ºC for 24 hours. The must was cold-settled at 10ºC, then fermented in used French oak barrels from Burgundy. After fermentation, it aged for 6 months in the same barrels, with bâtonnage and sur lie.
Duarte de Deus, a winemaker passionate about Alto Alentejo, found in Torre de Palma a challenging project, rich in history and symbolism. In the vineyard, he identified the microplots and the bedrock to extract the full potential of each variety. In the winery, he believes that only with minimal intervention can great wines be made — wines that reveal the region’s full potential over time.
Food pairings: charcoal-grilled scarlet prawns, fresh oysters, and prawn curry.
