Harvest: manual, in 15 kg boxes.
Vinification: after being destemmed and crushed, the grapes undergo a cold maceration for twelve hours, followed by pressing. Alcoholic fermentation then takes place at a controlled temperature between 14 ºC and 16 ºC.
