Vineyard Location: This wine comes from a vineyard located in the south of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa. Solar exposure: east-west. Soil type: clay and limestone soils. Climate: moderate Mediterranean with mild winters and not very hot summers. It thus has the proper conditions of a transition zone in which Atlantic and Mediterranean influences are mixed. The vineyard produces the grapes in the Integrated Production system. Harvest: manual harvesting, in the 2nd week of September. Vinification: grapes are harvested manually to boxes being quickly transported to the cellar where they are discharged to the membrane press, where the tear must is extracted without pressing. The wort is cooled, decanted and transferred to a stainless steel tank where it will ferment, with temperature control. After the fermentation of approximately 30 days the wines that have already been completely fermented begin their natural clarification process for 3 to 4 weeks, after which they are cleaned to remove the thick lees, and thus spend the cold winter months. At the time of bottling they are again cleaned and ready for bottling.
