The grapes are harvested by hand on the date of their best ripeness. Completely destemmed, they are slightly crushed and then pressed to obtain a fruity, balanced must with good acidity. It undergoes partial fermentation in French oak barrels at a controlled temperature of 16-18º C for 15-20 days. Bottled after 5 months of ageing in stainless steel vats.
