Rascunho
From the desire to explore and leverage our terroir and our imagination, through experimentation with new practices in the vineyard, new winemaking in the cellar, daring in the image with new clothes, new partnerships with producers, new blends, new varieties, without rules, without dogmas and without fear of risk, we created in 2015 the brand “Rascunho”.
The representation of the experimental and creative side of Quinta de Santiago and with the intention of testing new ways, sharing the results, ideas and
sharing the results, ideas and experiences with the connoisseurs.
Vinification: In the family winery and in a traditional way, all the knowledge and appropriate techniques are put into practice in order to obtain a wine with minimum intervention. No so2 is added at the entrance of the winery, there is a pre-fermentative maceration of 24 hours, whole bunch, manual pressing, fermentation
free fermentation in new French oak barrels of 400l and maturation without so2 correction for a period of 2 years.
Ageing: on full lees with Batonage for lees removal and wine protection. Second stage in bottle at the producer and in ideal conditions
for 12 months. Unfiltered, decanted. Subject to deposit. No CO2 added.
