Quinta D’Azinheira
Region: Portugal, Douro – Baixo Corgo sub-region.
Place of production: Azinheira village, Santa Marta de Penaguião, left bank of the Corgo River.
Altitude: Between 300 and 400 metres.
Vineyard: Schist soils with high stoniness | Vines aged between 5 and 25 years.
Vinification: The grapes, hand-harvested at optimal ripeness and transported in 20 kg boxes, were carefully selected, destemmed, and gently crushed. Pressed in a vertical press. The resulting must was cold-settled for 48 hours at 8 ºC in stainless steel tanks. Alcoholic fermentation took place at 12 ºC over 30 days. Aged for 8 months in stainless steel with lees stirring. Bottled in August 2024.

Analytical parameters: Total acidity: 6.3 g/l | Volatile acidity: 0.40 g/l | pH: 3.39 | Residual sugars: 0.6 g/l | Total dry extract: 25 g/l.
Food pairing: Perfect with fresh, light dishes such as salads, seafood, and grilled fish.
