Vinification: Overripe grapes harvested in November were gently pressed, and the must fermented at 12ºC. When reaching 11% alcohol, the temperature was lowered to 0ºC, and fermentation was stopped.
Pairs well with foie gras, intensely flavored cheeses, or almond tarts.

Boas Quintas
Quinta da Giesta and Fonte do Ouro are both highly representative of the traditional Portuguese landscape, characterised by small fragmented properties, but with a highly diversified land use – agriculture and forestry, low urbanisation and natural and semi-natural patches. Mostly composed by vineyards and pine forests, as well as, some small natural and semi-natural areas, this landscape is highly beneficial for the conservation of the Mediterranean biodiversity, since it promotes a moderate human pressure allowing the coexistence of humans, animals and the preservation of common rural habitats.
