A top white wine with many years ahead.
Pêra-Manca is the label that Adega Cartuxa reserves for its exceptional wines. First produced in 1990, it has become an essential reference among the great Alentejo whites.
Produced from a selection of Antão Vaz and Arinto grapes, grown in the vineyards of the Fundação Eugénio de Almeida. When the grapes reach optimal ripeness, they are harvested and transported to the winery, where the technological process begins: total destemming and gentle crushing, pressing, cooling, and must clarification. Part of the batch ferments in stainless steel tanks, while the other ferments in French oak barrels at a controlled temperature of 16 ºC.
After fermentation, the wine is aged on fine lees with periodic bâtonnage for 12 months. Finally, filtration, blending, tartaric and protein stabilization, final filtration, and bottling are performed, followed by a final 9-month ageing in bottle.
