Pacheca
The grapes were harvested into 25 kg boxes, after a careful selection for their best state of health, and then sent to the vinification centre where they were pressed in a pneumatic press. The must resulting from the pressing was fermented at a controlled temperature of 14-16oC. After the alcoholic fermentation, it was aged on the fine lees of fermentation in a stainless steel tank
stainless steel tank lined with French oak staves, with manual rackage for 9 months.
