La Crema
Weather conditions for the 2021 vintage:
The 2021 growing season was excellent in Sonoma County. A relatively dry winter worsened drought conditions and resulted in a significantly lighter crop than average. Spring was cold, with multiple frost events before and after budbreak. A warm, dry summer brought ideal ripening conditions, largely without extreme heat waves. However, some heat did arrive between early and mid-August, speeding up ripening—especially in the Russian River Valley. Harvest of the Saralee’s Vineyard Chardonnay began on September 1st.
Vinification notes:
The fruit was hand-picked, whole cluster pressed, and cold settled for 24 hours before being racked to barrel for fermentation. About 15% of the lot was co-inoculated with a house strain of malolactic bacteria. These barrels were then used for topping the rest of the lot after alcoholic fermentation.
