La Crema
The Essence of Saralee’s Vineyard
Located in the heart of the Russian River Valley, Saralee’s Vineyard is a tribute to the late Saralee Kunde, one of California’s most beloved and respected winegrowing figures. This 200-acre site, full of rustic charm, features a remarkable diversity of Chardonnay clones, a wide range of rootstocks, and eight distinct soil types – mostly sandy/gravelly or clay loams.
It’s an exceptional terroir, dotted with flower gardens and oak groves, that yields truly magical fruit. One of the finest cool-climate appellations in the world. A place made for La Crema.
2016 Harvest
After four years of drought, winter rains brought essential moisture back to the soil. Mild weather in February led to early budbreak. Spring temperatures remained moderate, promoting a healthy bloom and balanced berry development. Additional rainfall in March and April supported vigorous canopy growth. Late-summer heat accelerated sugar ripening, but was tempered by the region’s trademark fog, preserving acidity. Harvest began on September 7th at Saralee’s Vineyard.
Artisanal Winemaking
Our artisanal approach extends from vineyard to cellar. The grapes were hand-harvested and gently whole-cluster pressed. After one night of cold settling, the juice was fermented in French oak barrels using selected yeast strains. Full malolactic fermentation was carried out with an in-house culture, and lees were stirred regularly (bâtonnage) to impart texture and complexity. The wine was aged for nine months in French oak barrels (29% new), without racking.
