La Crema
Origin and terroir: The Monterey Valley stretches from the cold Monterey Bay to the southeasternmost parts of the Salinas Valley. The constant maritime influence — with fog and cool ocean breezes — creates ideal conditions for elegant wines with vibrant acidity. This Chardonnay is sourced from several vineyards across the Monterey AVA, including the Gravelstone and Clark estate vineyards. Northern sites contribute juicy fruit and freshness, while the southern parcels bring greater ripeness and aromatic richness.
Vintage: The 2020 growing season was relatively cool, with persistent fog and overcast skies throughout the summer. Moderate temperatures allowed for slow ripening, encouraging the development of concentrated flavours while retaining natural acidity. Harvest began on October 1st under ideal balance between sugar, acidity, and aromatic compounds.
Winemaking: The grapes were hand-harvested and gently pressed, followed by cold settling for 24 hours before being transferred to French and American oak barrels for fermentation. About 15% of the lots underwent controlled malolactic fermentation. A small portion was fermented in stainless steel, enhancing freshness and aromatic lift. The fine lees were stirred monthly (bâtonnage) to build complexity and mouthfeel. The wine was aged in oak for six to seven months before blending and bottling.
