A long, austere and pastoral valley. At one end, Monterey Bay — unusually deep, dramatically cold. At the other, Central California — rich in agriculture and heritage. Across it all, an ever-present coastal wind that rises off the ocean and cools both fruit and field.

EXCEPTIONAL GRAPES
Cool climates allow grapes to ripen slowly and remain longer on the vine, developing a broader and more nuanced range of flavours and aromas — resulting in wines that are rich, layered and complex.
In 2016, warm winter temperatures led to early budbreak in February and March. Mild spring and early summer weather slowed ripening, while cool afternoon breezes and crisp nights preserved acidity and encouraged flavour development. A mid-summer warm spell promoted optimal ripeness. Harvest began on 13 September.
ARTISANAL WINEMAKING
Our boutique, hands-on approach continued in the cellar.
The fruit was both hand- and machine-picked, then gently pressed. After 24 hours of cold settling, the juice was transferred to barrels for fermentation. Fifteen percent of the lot was co-inoculated with our proprietary malolactic strain. These barrels were later used to top the remainder of the lot post-primary fermentation. Lees were stirred monthly (bâtonnage) to enhance texture and complexity.
Barrel Ageing: 7 months. Oak Type: Primarily French oak; 17% new.
Total Acidity: 0.55 g / 100 mL | pH: 3.61
Each sip speaks of Monterey — smooth and refined. Bright, exotic. Fresh, spicy, and just a touch wild.
