Herdade dos Grous
The grapes of the Arinto grape variety, which make up this wine, were hand-harvested on August 19th, showcasing exceptional quality that anticipates a wine with great potential.
The winter of 2021 saw high levels of precipitation that helped replenish the water reserves in most soils. In the spring, with some heat spikes followed by mild temperatures, there was an acceleration in the phenological state of the grape. Temperatures remained mild in the summer, allowing for regular and balanced development of grape ripening, and the beginning of the harvest in early August, similar to the previous year.
The grapes remained overnight in the cold room at 8°C. After this period, there was a manual selection of the grapes before total destemming, followed by a gentle pressing of the fresh grapes. The must settles at a low temperature for two days. Fermentation takes place in the cement tank, where it ages for 6 months “sur lies” with “battonage.” The choice of this tank was motivated by its thermal stability, preservation of the wine’s natural and neutral characteristics, and maximizing thermal inertia due to its spherical shape. Bottled in July 2023.
A wine that pairs very well with fish dishes, seafood, and white meats. It is also suitable for accompanying Asian cuisine dishes.
