The wine fermented in a new 1000 litre barrel (botticella). Old vineyards and many grape varieties originated an austere white wine, firm in the ripe fruit, with the notes of wood involving the set that results in a very good structure. Excellent width of mouth, full, with immense character, without giving in to fashions, with adjusted acidity. In the end the wood notes return leaving a very persistent track. A remarkable white wine. It is a white wine with a rich and complex aroma where it combines ripe fruits and some balsamic tisane with lightly smoked and mineral notes. It enters very smooth and velvety in the mouth, it remains in fine and elegant tasting as the centre of the mouth rises to finish in a wide, rich, deep and full of flavour finish.
Manual harvesting from 16th to 24th August. Crushing, pressing and static decanting of the must. Natural fermentation and ageing for 12 months in old oak barrels (225 litres). No malolactic fermentation. Bottling on the 24th May 2021 without racking or filtration.

My desire is to make pure slow wines, the kind you drink two or three years after the harvest and admire in the decades that follow. Besides slow wines, my wines (of minimalist oenology), should always privilege character over perfection, because perfection without soul or character makes wines, as well as people, tiresome.
