THE WINE
This Camaleão Sauvignon Blanc was made from grapes coming from a vineyard in northern Portugal, strongly influenced by Atlantic maritime winds. Low intervention during vinification reflects the authenticity of the variety on granite-origin soils.
VINIFICATION
Selected grapes, total destemming, and gentle pneumatic pressing. Static cold settling. Slow fermentation with temperature control (15-18 ºC) in stainless steel tanks.
AGING
Aged on fine lees with bâtonnage.
SERVING / PAIRING
Fish dishes, seafood, pizzas, salads, and light pasta.
