This wine is named after the Puig de Galatzió mountain, which is part of the Sierra de Tramontana range. With its 1,027 meters, it is one of the tallest mountains on Mallorca, situated just behind the beautiful town of Estellencs.
Here, white grapes have always played a major role, and the choice of this name for the white wine pays homage to Giro Ros and Chardonnay. The mountain faces the winery at a 265° angle.
Winemaking: We harvested our Chardonnay on August 11th and 12th and processed a total of 4695 kilos, which resulted in 2300 litres ready to ferment. (As we press the whites very gently, we always lose about 35–50% of the total harvested amount during processing.) On August 16th and 17th, we brought in 6563 kilos of Giró Ros, which after processing gave us 4250 litres of beautifully textured and structured juice ready to ferment. After fermentation, we decided to blend the 2300 litres of Chardonnay with 2900 litres of Giró Ros, and then added a touch of charm and spice: 1150 litres of Viognier and a dash of Sauvignon Blanc for freshness and edge! The remaining Giró Ros went into two 500-litre oak barrels as an experiment, plus a small 250-litre tank for topping up.
Galatzó can be enjoyed anywhere and with anything! A highly versatile wine that will make any occasion, food, or company shine brighter and bring out the best in everything and everyone. Serve Galatzó in a proper large glass to let it breathe and see how it reveals its beauty with a bit of air.
Delicious with razor clams, seared in a pan for 2 minutes until they open, with fresh olive oil, a bit of parsley and garlic, and a splash of this same wine and lemon juice. For something slightly more elaborate, a suggestion would be oven-roasted sea bass with coconut milk, ginger, chili, lime, and coriander. Indulgent but a marvelous pairing!
