Beyra
ORIGIN – A very old vineyard parcel from Prado Novo, in the parish of Vermiosa, with clay-limestone soil and quartzite veins, at an altitude of 700 meters.
VINIFICATION – Manual harvest, crushing without destemming. Spontaneous fermentation in stainless steel vats.
AGING – Aging with lees stirring (batonnage) until bottling at the end of February, followed by 3 months of bottle aging.
PAIRING – As an aperitif, with grilled fish, seafood, and good friends.
