Harvest: Manual. Vinification: The wine, the base of the sparkling wine, is vinified caste to caste, followed by alcoholic fermentation in stainless steel tanks, with controlled temperature. The second fermentation takes place in the bottle, where it remains for about 6 months until the “degorgement”.
