Attractive blondish colour with topaz halo. Majestic nose with a bouquet of dried fruits, wood notes and appetising hints of chocolate. On the palate is smooth and velvety. A wine of great intensity, revealing a magnificent tannic strength and a sumptuous elegance. Long and delightful finish.

Cálem 10 Year Old Tawny Port is a wine that reflects the art of blending, and results from the careful combination of wines aged in oak casks, with an average age of 10 years. Hand-picked at their optimum point, the grapes are destemmed, crushed and vinified using a process based on careful maceration to extract colour, tannins and aromas from the skins, complemented by permanent pumping over during fermentation. Fermentation takes place in lagares, at a controlled temperature between 28-30ºC, until the desired degree of Baumé is reached. At this stage, the addition of grape brandy (benefício) takes place, giving rise to a fortified wine. A high quality wine, obtained by blending wines from different harvests from different years in order to obtain a complementarity of organoleptic characteristics typical of this style of old tawny.
RECOMMENDATIONS: The velvety texture and the singular aromatic expression stand out notably with main courses which include nuts. Irresistible with a terrine of foie gras with aubergine and walnuts. A superb choice to accompany endless desserts including crème brûlée, delicious caramel brownies, chocolate and pistachio pave and walnut crostini with chèvre cheese.
