Young, with a slightly golden colour, fruity with an elegant aroma. Fine, velvety bubbles that dissolve on the palate, with a lively acidity providing good structure, in a creamy, fresh and balanced ensemble.

Sidónio de Sousa

High-quality sparkling wine, produced by the traditional method with grapes from national varieties.

Vineyard location:
Situated south of the village of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa.

Sun exposure: east-west.

Soil: Clay-limestone.

Climate: Moderate Mediterranean, with mild winters and temperate summers, typical of a transition zone influenced by both Atlantic and Mediterranean climates.

Winemaking:
Grapes are unloaded into a membrane press, crushed, and the juice is extracted. The juice is decanted and transferred to stainless steel tanks for fermentation under controlled temperature.

Ageing:
After fermentation, the wine decants naturally in the tank and is clarified at the end of the year. Preparation for bottling using the traditional method with natural yeasts. Bottle fermentation occurs at controlled temperature, in the absence of light. Ageing continues in the cellar until riddling and disgorgement without added sugar.

Dulcineia dos Santos Ferreira - Sidónio de Sousa

It was Paulo Sousa’s grandfather, the company manager, who started the family’s winemaking activity in the 1930s by acquiring a vineyard that he cultivated and vinified to sell bulk wine to regional cellars. In 1990, Sidónio, Paulo Sousa’s father, began bottling Baga under his own label.

After 20 years in the quality department of one of the region’s largest companies, Paulo Sousa, driven by the same passion for Baga and the defence of an identity and territory, has been fully dedicated since 2009 to the wine brand created by his father.

Today, the estate comprises 12 hectares of own vineyards, still expanding, planted on clay-limestone soils in Ancas, in the Bairrada region.
