Ninfa
The vineyard’s location is influenced by the Mediterranean climate as a result of its proximity to the Atlantic. The south-facing vineyard slopes provide maximum exposure and ideal drainage, while extreme daytime temperatures ensure freshness and balance. Limestone-clay soils and low yields ensure wines of concentration and ageable structure. Harvested when phenolic maturity and acidity have reached equilibrium. Cooling of the grapes, gentle pressing without maceration fermentation at less than 15° C.
