Água viva
Bairrada is an exceptional region for sparkling wine production. The limestone terroir and the natural acidity of the Bical, Cercial, and Maria Gomes grape varieties are outstanding features that allow for the production of high-quality sparkling wines. In 2013, following the tradition of Quinta de Baixo to produce classic-style sparkling wines with very low dosage, Niepoort created Água Viva, a brut sparkling wine.
Vinification
The 2018 vintage was challenging due to heavy rainfall between January and May, resulting in a harvest with fewer fruits, but of excellent quality. The sparkling wine was vinified according to the traditional method, with the second fermentation in bottle, using free yeasts. It aged on fine lees in the Quinta de Baixo cellar for 6 years.

Ideal with fatty dishes like suckling pig, roast kid in a wood-fired oven, or salt cod.
