Luis Pato
To evidence the terroir’s character, this wine comes from a vineyard called Formal. Located in a small east-facing slope, in Óis do Bairro, it is at the heart of the Bairrada white wines map, as delimited by António Augusto Aguiar in 1866, in his Memoir about the Winemaking Processes. In this vineyard, the first harvest for sparkling wine is made between mid and late August, to obtain high levels of acidity; the second harvest is made two weeks later, for the production of white wine.
