Quinta dos Roques
Crushing of the grapes with destemming, followed by gentle pressing in an automatic treading press. After must separation, it was clarified by gravity and decantation. Fermentation, with selected yeasts, was carried out at a temperature of 16- 18oC.
After fermentation the wine was stored in a stainless steel tank, protected with inert gases, where it suffered a natural clarification through the action of the Beira winter cold. The preparation of the wine for bottling consisted of a light colage, tartaric stabilisation by cold action and filtration in cellulose sheets.
Bottling took place in mid-March 2021.
