Maïa
The harvest is carried out early in the morning to avoid oxidative problems that arise from harvesting when it’s hot at midday. During the harvest, the grapes are selected and placed in small crates, having been harvested both by hand and mechanically. Once the grapes reach the cellars, they are manually sorted and then undergo optical sorting. Both Liam Steevenson MW and Mark Pygott MW oversee the blending.
