The grapes come from the sun-soaked southern French coast. Cooling sea breezes help keep the grapes in optimal health and allow the development of expressive aromas and bright acidity.
The grapes are picked at night to protect them from oxidation and preserve their aromas.
After destemming, the grapes are gently pressed and then processed through static racking.
Fermentation is kept at a cool temperature to preserve freshness.
They are matured in stainless steel tanks for 3 months on their fine lees to add texture and complexity.
