Cartuxa
This wine links its quality to the name of the Carthusian monks who, since 1598, have lived a life of solitary prayer at the Santa Maria Scala Coeli convent in Évora. It was first produced in 2021.

Cartuxa Rosé was produced from two parcels of Touriga Nacional, planted in the vineyards of the Eugénio de Almeida Foundation. The grapes were hand-harvested, cooled to 14ºC, then fully destemmed with optical sorting of the berries. After pressing (gravity-fed), only the free-run and low-pressure fraction of the must was selected for fermentation in stainless steel tanks and barrels—10% of the batch fermented in used barrels, enhancing volume and creaminess. No malolactic fermentation was carried out. The wine aged on fine lees for nine months, with regular lees stirring.
