Manual harvest in 12 kg boxes on 19 September 2021. At the winery, the grapes underwent further selection on a vibrating sorting belt. Fermentation
took place in French oak vats, at a temperature of 24ºC. In 500 L French oak barrels, for a period of 16 months. Ageing in bottle for a period of 11 months. This wine was not stabilised before bottling in order not to affect its evolution potential, and may create a slight deposit during bottle ageing.
