Sonante
DOP – Protected Designation of Origin
Terroir: Granitic soils, with altitudes between 400 and 600 metres, strongly influenced by the nearby 2,000-metre-high mountain.
Vineyards: Located in the areas of Vila Nova de Tazem and Gouveia, with vines aged between 15 and 40 years.
Vinification: Grapes completely destemmed and gently crushed into stainless steel tanks. Fermentation took place at a controlled temperature of 23ºC, with gentle pump-overs.
Ageing: Slight ageing in wooden barrels.
