Ribeiro Santo
The Dão Demarcated Region is one of Portugal’s oldest wine regions, officially established in 1908. Located in the centre of the country, in mountainous terrain ranging from 400 to 700 metres in altitude, it is defined by the Serra da Estrela — the highest mountain in mainland Portugal. The region takes its name from the Dão River, which flows through it. The wines are heavily influenced by the granitic soils and the fact that vineyards are often surrounded by pine and eucalyptus forests.
Vineyards
The vineyard follows the traditional varietal composition and was planted in poor, granitic soil with large rocky outcrops and views of the Serra da Estrela. It is entirely farmed under an integrated production system, reflecting a strong environmental commitment. The combination of traditional viticultural practices with the careful use of environmentally friendly organic products results in balanced yields.
Winemaking
Harvest took place in the second week of September. Grapes were hand-picked into small 18 kg boxes, following a strict selection of the best fruit in the vineyard. They were fully destemmed and placed in a traditional granite lagar, where they macerated for 24 hours at low temperature before alcoholic fermentation began, using selected yeasts and controlled temperatures. Fermentation lasted about 15 days, with gentle foot treading to extract colour and aromas. After fermentation, the wine was racked into new French oak barrels, where malolactic fermentation occurred. It aged for 14 months in barrel and, after bottling, rested for at least 6 months in a cool cellar.
