Quinta dos Castelares
Manual harvesting. Reception with total destemming and immediate crushing, the grapes are fermented by variety in order to achieve a rigorous selection that will then give rise to the blend.
Fermentation is carried out in small capacity stainless steel vats, with temperatures around 24ºC. Smooth and controlled macerations in order to obtain elegant and aromatic wines.
