The PSI features powerful plum, mineral and black cherry aromas. On the palate, dark fruits and minerality for violets, vanilla and a pinch of tobacco are accentuated. It is a wine of remarkable purity, deep and complex. It has a bouquet rolled with fresh blackberry, blueberry, and vanilla essence, which makes it well defined and harmonious. The palate is very well defined and slightly thin. It is natural and fresh with balsamic notes and berries in the end.

PSI

The Pingus PSI is a joint project of Peter Sisseck with local producers of former Grape Fine Wine wineries. It began in 2006, being in 2007 the first crop produced. The intention of this project is to produce a wine that captures the soul of Ribera del Duero, giving more value to the purity and original characteristics of Tempranillo grape, which is the predominant grape in this wine. The other grape that can be used in small quantities is Garnacha. In the production of wines organic and biodynamic practices are used to obtain grapes of superior quality. Long and delicate macerations are used to ensure the most harmonious extraction of the grapes. It goes through 18 months of aging in French oak before being bottled.

In the wine world, 15 or 20 years are not much, much less to build a brand with a global impact. But sometimes a harvest is enough to reach the status of myth, of legend. Pingus wine is an example of such a phenomenon, building its fame with an adventure where luck and chance combine with work, inspiration and talent. Peter Sisseck, nicknamed Pingus, founded the Domain of Pingus in 1995. An agronomist born in 1962 in Denmark, he worked in Bordeaux and California before settling in Spain in 1990. He located 5 hectares of very old vineyards in Tempranillo and founded the winery, in the province of Burgos, in full Ribera del Duero. The secret of wine is Sisseck’s obsession with quality. Among the several vineyards, the youngest is 50 years old and the oldest are over 70 years old. Once harvested, the destemming is done manually, bago a bago, choosing only the most mature grapes. The wine is prepared with minimal intervention and manipulation and bottled after 20 to 33 months in French oak barrels, without clarification or filtration, to better maintain its natural qualities. The result is an extraordinary, concentrated, powerful red with very ripe fruit but always with an impressive balance and unmatched elegance and softness. The old vines have this characteristic, their deep roots spread on the ground and they can extract from the earth the components that confer great complexity and great depth, while maintaining the balance between alcohol, acidity and, above all, silky texture.
