From its origin, from the vine to the bottle, the philosophy is to create a wine that respects the expression of the berry without “makeup” and without artifice, maintaining ancestral vinification techniques with a minimum of intervention. Our red wine originates from old vines from various areas mentioned on the map. The work of viticulture is based on traditional techniques of the region, maintaining natural vegetation without the use of herbicides. With a small percentage of whole grapes (about 10%), the vinification of the berry is made in an oak mill inspired by Roman times. Rest for 18 months in barrels of 500 liters French oak fine grain, 80% used and 20% new. All of them are manually sealed with natural wax in order to ensure a good aging in the basement.
