M. Chapoutier
Les Greffieux de M. Chapoutier is a Hermitage wine made from a single grape variety. The plot is located at the foot of the Hermitage hill, on a terrace of glacial alluvium. This vineyard is exceptional; its subsoil is composed of deep clay, which gives the wine refinement and aromatic richness, and rounded pebbles, which absorb heat and provide concentration and structure.
In the vinification phase, the grapes are picked at the peak of ripeness and completely destemmed before being processed in cement vats. The maceration process is prolonged to gently extract the tannins. Only the run-off must is used. The wine is then aged for 14 to 18 months, 100 per cent in oak barrels (1/3 of which are new and the rest are barrels from one or two wines).
