López de Heredia
Viña Tondonia is a stunning 100-hectare vineyard located on the right bank of the Ebro River. With alluvial clay-limestone soils, it is ideal for producing structured, elegant wines. The vines span 170 hectares and yield an average of 800,000 kg of grapes per year, used exclusively in the estate’s highest-quality D.O.Ca. Rioja wines.
Harvesting is entirely manual, bunch by bunch, using a curved knife called a “corquete”, preventing any damage or early fermentation. The grapes are carefully placed in traditional containers made at the winery itself, where their long conversation with oak begins.
After being weighed and gently destemmed, the grapes release the must, which immediately comes into contact with the natural yeasts on the grape skins. Fermentation takes place in large 240 hl oak vats over about seven days, followed by a slower malolactic fermentation in Bordeaux-style barrels that lasts five to six months.
Following racking, the wine is aged for six years in 225-liter American oak barrels in perfectly conditioned underground cellars, then bottled unfiltered and allowed to rest in glass.
Food Pairing: This elegant, refined wine with spicy and vanilla notes is a perfect match for warm salads with quail or poultry, puff pastries, foie gras with raspberry reduction, roast lamb or suckling pig, cured meats, soft cheeses, mushrooms… Extremely versatile and adaptable to many moments.
