Its full and fat body on the palate gives it remarkable elegance. The complex aromas of black fruit (black olives and blackberry) derive from the carefully controlled extraction process during vinification. The rich and fleshy bouquet of aromas persists in revealing touches of roasted coffee, blackcurrant and prunes.

Le Lièvre

The Minervois region has always been a pole of attraction as a testimony to historical monuments, as famous as the Château de Minerva. The soils, dating from the Eocene era, cover the stone, essentially the schist slopes of Montagne Noir.
All the grapes are harvested by machine to ensure that the fruit reaches the winery quickly and in good condition. After total destemming, Syrah is vinified in concrete tanks to help express its individual quality. After bottling, the wine is stored for several months before being marketed.
