H.O. TINTO 2019 is born from the selection of plots planted with Touriga Nacional, Touriga Franca and Sousão. With predominantly east-facing exposure and schist and clay soils, the various plots are located between 250 and 400 m in altitude, requiring close monitoring of ripening across the different terroirs.
After manual harvesting, the grapes were transported in 18 kg crates to preserve bunch integrity. At the winery, the crates were unloaded onto a sorting table for an initial selection. This was followed by destemming, berry-by-berry selection, and crushing, with gravity transfer to stainless steel fermentation vats. After 48 hours of pre-fermentation maceration at low temperatures, alcoholic fermentation lasted 10 days, during which, depending on the grape variety and plot, a regimen of pump-overs and délestage was applied. After malolactic fermentation, the different lots were aged in 400 L oak barrels for 14 months. Following bottling, the wine aged a further 6 months in bottle.
