Dedicated to Paolo Colla, the founder of the winery and a great lover of the Dolcetto variety. This variety is deeply rooted in the Langhe traditions. Paulin aims to be a clear, fresh, and precise expression of this heritage. With a red color tending towards ruby, with violet reflections. On the nose, it reveals an aromatic complexity evoking a flowering field, cherry orchards, and vines laden with ripe fruit. On the palate, it conveys freshness and balance, with a softness provided by tannins that are naturally not astringent.

The 2021 vintage began with a mild winter, although marked by abundant precipitation, including snowfall, which ensured an excellent water reserve — essential for the rest of the cycle, which turned out to be one of the least rainy in recent years. Spring marked the beginning of a long period of good weather, which continued throughout the summer, with average temperatures and no excesses, especially at night. The summer remained stable and dry, contributing to an excellent sanitary and qualitative condition at harvest time. In conclusion, the results were surprising in terms of grape quality, possibly also due to the fact that the production was not excessive.

Maceration: 6 days.
MLF (malolactic fermentation): 100%.
Aging: in stainless steel.

Analytical data: Total acidity: 5.08 g/l | Dry extract: 27.8 g/l.

Winemaker’s Note: After an aging period of about 12 months in stainless steel, Paulin is bottled and normally rests for a few more months before being released.

We take care of our vines one by one, because each one is different from the others. We make mass selections from the oldest and most interesting plants in order to preserve the original genetic imprints. We seek balance in the individual plant, which then becomes the balance of the entire vineyard, and then of the wine we produce.
